A frugal dinner as promised

Tonight's dinner was a Mexican Casserole!  It was a HIT with the hubby!

RECIPE....Total cost for this meal = $1.83 and you even get dessert out of it!
1   can Pillsbury Grands buttermilk biscuits - final cost w/coupons = .22
1   LB. Ground Beef  - Got on sale .77 per pound
1   can Hot Rotel - final cost w/coupons  .16
1   cup corn - leftover from dinner.....but yes, it was FREE Green Giant steamers w/coupon
1   tsp. pepper
1   tsp. garlic salt
2   tsp. onion powder
1   Tbsp. chili powder - I use New Mexico chili powder
1   cup shredded cheese (We prefer colby/monterey blend)  .44

Preheat oven to 375 degrees.  Cook ground beef with all spices.  Take 6 of the biscuits and cut them into quarters.  When ground beef is cooked move it to a bowl and add Rotel and corn.  Then add the quartered biscuits and lightly stir to make sure the biscuits are coated with mixture.  Add mixed ingredients to a greased 9x13 pan.  Bake for 20 minutes or until biscuits are golden brown.  Add cheese to top and bake another 10-15 minutes.  We topped it with shredded lettuce (from our garden), sour cream (.09) and salsa (Free w/coupon). 

REMEMBER????  You had two biscuits leftover from the 8 roll you just used for dinner!  Here is a quick, easy and delish dessert!



RECIPE
2 leftover biscuits from the ones you used from dinner - price is included in the dinner
Cinnamon/Sugar mix - maximum probably .15

Heat approximately 1 - 2 inches of vegetable oil in a frying pan or sauce pan.  Take the remaining biscuits and cut each one into 8 pieces.  Once the oil is hot enough drop the biscuits "bites" in.  Let fry for approximately 1-2 minutes or until nice golden brown.  Remove from oil and roll in the cinnamon/sugar mixture.  Ever had a churro....well, that is what these remind me of just a little softer texture on the outside...oh boy are they YUMMY!
